Kate, Slimmer of the Season, is renowned for her amazing ‘Pack Hacks’ on her Instagram and Blog. Here, she shares two amazing recipes to mix up your Sweet & Sour Noodles. Will you try the Sweet and Sour Chinese Omlette or the Lettuce Wraps? Or both?! 

Sweet and Sour Chinese Omelette

Ingredients: 

Method: 

  1. Mix Sweet & Sour noodles slowly with 230ml boiling water in a microwavable bowl 
  2. Microwave for 1 minute 30 seconds (800W). Stir. Microwave for a further 1 minute 30 seconds 
  3. Whisk 2 eggs in a separate bowl 
  4. Cook the mushrooms in a frying pan with the spices 
  5. Add the Sweet & Sour noodles and egg to the frying pan 
  6. Cook like an omelette 
  7. Serve with salad and Soy sauce 

 

Lettuce Wraps

Ingredients: 

Method:  

  1. Mix Sweet & Sour noodles slowly with 230ml boiling water in a microwavable bowl 
  2. Microwave for 1 minute 30 seconds (800W). Stir. Microwave for a further 1 minute 30 seconds 
  3. Pour boiling water over the Pak-Choi and leave to soak until soft 
  4. Cook the red pepper, courgette and mushrooms until softened  
  5. Drain the Pak-Choi leaves and add the vegetables and noodles 
  6. Roll up and place the wraps on a baking tray 
  7. Pop in the oven at 180°C for 8-10 minutes until cooked 
  8. Serve with Soy sauce to dip
