Kate, Slimmer of the Season, is renowned for her amazing ‘Pack Hacks’ on her Instagram and Blog. Here, she shares two amazing recipes to mix up your Sweet & Sour Noodles. Will you try the Sweet and Sour Chinese Omlette or the Lettuce Wraps? Or both?!
Sweet and Sour Chinese Omelette
Ingredients:
- 1 x exante meal replacement Sweet & Sour Noodles
- 230ml boiling water
- 50g mushrooms
- 2 x small eggs
- ½ tsp Chinese 5 spice
- ½ tsp chili
- ½ tsp garlic
- 1 x tbsp Soy sauce (dark and light)
Method:
- Mix Sweet & Sour noodles slowly with 230ml boiling water in a microwavable bowl
- Microwave for 1 minute 30 seconds (800W). Stir. Microwave for a further 1 minute 30 seconds
- Whisk 2 eggs in a separate bowl
- Cook the mushrooms in a frying pan with the spices
- Add the Sweet & Sour noodles and egg to the frying pan
- Cook like an omelette
- Serve with salad and Soy sauce
Lettuce Wraps
Ingredients:
- 1 x exante meal replacement Sweet & Sour Noodles
- 230ml boiling water
- ¼ red pepper
- ¼ courgette
- 2 x mushrooms
- 4 x Pak-Choi leaves
- 1 x tbsp Soy sauce
Method:
- Mix Sweet & Sour noodles slowly with 230ml boiling water in a microwavable bowl
- Microwave for 1 minute 30 seconds (800W). Stir. Microwave for a further 1 minute 30 seconds
- Pour boiling water over the Pak-Choi and leave to soak until soft
- Cook the red pepper, courgette and mushrooms until softened
- Drain the Pak-Choi leaves and add the vegetables and noodles
- Roll up and place the wraps on a baking tray
- Pop in the oven at 180°C for 8-10 minutes until cooked
- Serve with Soy sauce to dip
