Sweet and Sour Chinese Omelette
Ingredients:
230ml boiling water
50g mushrooms
2 x small eggs
½ tsp Chinese 5 spice
½ tsp chili
½ tsp garlic
1 x tbsp Soy sauce (dark and light)
Method:
Mix Sweet & Sour noodles slowly with 230ml boiling water in a microwavable bowl
Microwave for 1 minute 30 seconds (800W). Stir. Microwave for a further 1 minute 30 seconds
Whisk 2 eggs in a separate bowl
Cook the mushrooms in a frying pan with the spices
Add the Sweet & Sour noodles and egg to the frying pan
Cook like an omelette
Serve with salad and Soy sauce
Lettuce Wraps
Ingredients:
230ml boiling water
¼ red pepper
¼ courgette
2 x mushrooms
4 x Pak-Choi leaves
1 x tbsp Soy sauce
Method:
Mix Sweet & Sour noodles slowly with 230ml boiling water in a microwavable bowl
Microwave for 1 minute 30 seconds (800W). Stir. Microwave for a further 1 minute 30 seconds
Pour boiling water over the Pak-Choi and leave to soak until soft
Cook the red pepper, courgette and mushrooms until softened
Drain the Pak-Choi leaves and add the vegetables and noodles
Roll up and place the wraps on a baking tray
Pop in the oven at 180°C for 8-10 minutes until cooked
Serve with Soy sauce to dip
