Baked Trio | Sweet Potato, Carrot and Courgette Sticks
Sweet potatoes have a lower glycemic load and glycemic index than regular potatoes, meaning your blood sugar won't rise as much.
Ingredients
1 sweet potato, small
1 large carrot
1 courgette
1 tbsp olive oil
Salt and pepper (optional)
Method- Slice sweet potato, carrot and courgette to form julienne shaped sticks
- Rub with olive oil and salt and pepper to taste
- Bake for 20 minutes or until cooked
