Oh steak, where would we be without you? Despite the on, off health risk claims on red meat, eaten in moderation steak is packed full of protein, iron and vitamin B12 – all of which are essential for growth and brain development.

Beef Steak with Lime Rice Recipe

This impressive, flavourful meal doesn't take as long as you think since the steak cooks while the rice does its thing.

 The fresh lime gives this meal a real zing.

Ingredients
  • 400g beef fillet
  • 150g konjac rice
  • 80g broccoli
  • 60g cauliflower
  • 1 carrot
  • 1 tbsp parsley
  • 1 tbsp basil, dried
  • 1 tbsp lime juice and grated zest
  • 1 tbsp olive oil
  • 1 tsp thyme
Method
  1. Prepare beef steak by rubbing with olive oil and herbs
  2. In a non-stick pan (high heat) fry the steak until cooked to your preference
  3. Prepare konjac rice, as per packet instructions
  4. In a steamer, cook cauliflower, carrot and broccoli
  5. Serve beef steak with konjac rice and vegetables
