Stuffed Chicken Breast with Veg

Chicken offers an easy way to eat protein while keeping consumption of saturated fat to a minimum
Ingredients
200g chicken breast, skinless
80g broccoli
60g low-fat cottage cheese
40g cherry tomatoes
2 tbsp olive oil
2 tbsp chopped parsley, fresh
1 tbsp dried oregano
1 tsp dried basil
Method
Rub chicken breast with olive oil and dried herbs
Slit inside using sharp night and use a spoon to wedge open
Fill chicken breast with low-fat cottage cheese and parsley
Grill until cooked
Serve with broccoli and vegetables of choice
