Exante Veggie Cauli Rice Recipe

Save yourself some calories with this colourful, healthy feast! Top Tip: if you make a batch of cauliflower granules you can freeze it. However, cooked cauliflower rice should not be frozen – as re-heating cauliflower rice often delivers a very soggy result.

This dish is vegetarian friendly!

Ingredients
  • 250g cauliflower (crumbled in food processor)
  • 1 clove garlic, crushed
  • 1 tsp olive oil
  • 1 tsp cumin seeds
  • 5 tbsp water
  • 50g peas
  • 1 spring onion sliced
  • 1 carrot
  • 1 red pepper
  • Salt and pepper to taste
Method
  1. Blitz 250g cauliflower in a food processer until
  2. auliflower and cook until brown (6-8 minutes)
  3. Add water, peas, spring onion, sliced carrot and red pepper
  4. Salt and pepper to taste
