Veggie Cauli Rice
Save yourself some calories with this colourful, healthy feast! Top Tip: if you make a batch of cauliflower granules you can freeze it. However, cooked cauliflower rice should not be frozen – as re-heating cauliflower rice often delivers a very soggy result.
IngredientsThis dish is vegetarian friendly!
- 250g cauliflower (crumbled in food processor)
- 1 clove garlic, crushed
- 1 tsp olive oil
- 1 tsp cumin seeds
- 5 tbsp water
- 50g peas
- 1 spring onion sliced
- 1 carrot
- 1 red pepper
- Salt and pepper to taste
- Blitz 250g cauliflower in a food processer until
- auliflower and cook until brown (6-8 minutes)
- Add water, peas, spring onion, sliced carrot and red pepper
- Salt and pepper to taste
