Salad doesn't have to be bland and our Mediterranean chicken salad certainly proves it! Full of fresh and zesty flavours, it will really awaken your taste buds! Serve warm for dinner, and pack up any leftovers for a low-carb lunch that will make your colleagues green with envy! With chicken bringing hunger-busting protein,  and a sprinkle of olives bringing an excellent source of iron, calcium, and vitamin A. This salad really has the perfect nutritional balance!

Mediterranean Chicken Salad Recipe

Oil and Vinaigrette-based dressings should be your go-to when choosing your salad accompaniment. They add all the flavour without the calories found in creamy dressings such a Ranch or Caesar.

Olives are an excellent source of iron, calcium, and vitamin A
Ingredients

Serves 4

  • 50g baby spinach
  • 40g cherry tomatoes
  • 30g red pepper
  • 1 large cucumber, diced
  • 1 red onion, sliced
  • 1 avocado, sliced
  • ½ cup kalamata olives (or black olives)
  • Lemon wedge (to serve)
  • 500g skinless chicken breasts (125g per person)
  • 1 tbsp olive oil
  • 2 tbsp chopped parsley
  • 1 tsp dried basil
  • 1 tsp garlic paste
  • 1 tsp dried oregano
  • Salt and pepper to taste
Method
  1. Marinate chicken breast with olive oil, parsley, basil, garlic and oregano
  2. Grill chicken until cooked through
  3. In a mixing bowl, add spinach, tomatoes, red pepper, cucumber, onion, sliced avocado and olives
  4. Mix and top with cooked chicken breast
