CINNAMON BUNS
You will need:
1x pack cinnamon shake
20g self rising flour
50g non fat Greek yogurt
25g unsweetened applesauce
1 Tsp baking powder
3-4 drops vanilla flavour drops
20g light butter
20g sweetener of choice (I used brown)
2tsp cinnamon
2 tablespoons powdered Erythritol
Tablespoon non fat yogurt
exante vanilla flavour drops
Splash sugar free almond milk in case the mixture it too thick
Method:
Mix the dry ingredients before adding the wet ingredients to form a slightly sticky dough. Add the dough to a floured surface to help with rolling
Sprinkle some flour and extra cinnamon on the dough to help reduce stickiness, ready for rolling
Roll or press down the dough into a rectangle (it doesn’t have to be perfect!)
Soften your butter in the microwave to make it easily spreadable, then cover the entire dough
Mix the cinnamon and brown sweetener together in a small bowl, then sprinkle it over the butter. Leave a small amount of room around the edges to avoid the filling melting out of the cinnamon rolls as they bake
Roll the cinnamon roll dough towards you, trying to keep it as tightly rolled as possible. I used the parchment paper to pull it towards me to allow the dough to roll itself
Using a sharp serrated knife, score your dough to measure out 10 cinnamon rolls, then slice into 10
Place your cinnamon rolls spaced out in a round pre-greased cake pan
Bake at 170 c for 20 minutes
Mix the powdered Erythritol & Greek yogurt & a splash of milk to form the icing
After baking, allow the warm cinnamon rolls to cool for about 10 minutes before adding your icing
Spread the icing over the top of the cinnamon rolls, top with Chocolate & Cranberry Snack Shots and dig in
Recipe makes 7 rolls and is roughly 415 calories in total, so only 59 calories each!
