So darned good
5One of the best Exante products in my opinion. Make them as per the instructions for thick American style pancakes, or add more water to make British pancakes, or a bit more water to make French crêpes. These are so good and I really look forward to having them on a Sunday morning, or when I get home at night and feel like more than a liquid meal. Top tips: Beat until smooth. I use an electric hand blender but a whisk and elbow grease will do the same thing. Get all the mixture off the blender/whisk because you don't want to lose it. Let the mixture sit for about 5-15 minutes. It thickens slightly, but also gives a better result. If you are not keen on lemon flavour (I love it), make the thinner pancakes as the flavour will be reduced. I use medium heat under the pan, adjust yours depending on your hob. Use a squirt of FryLight butter, sunflower or other 1 calorie spray when the pan is hot and between each pancake. Avoid the strong flavoured ones like Olive Oil, even on non-stick frypans. Wait until you see bubbles across the top of the pancake before turning it. A fish slice/spatula works better than a knife. If the Exante Advent calendars are still in stock, buy some, and sprinkle one or two of the chocolate squares, chopped or coarsely grated, into the pancake mix for choc chip pancakes. The Exante syrups, particularly the raspberry one, goes well with the lemon pancakes. If you are not on TS, try a few blueberries in the batter or fresh strawberries, raspberries etc on the side. Try them!
